Vegetarian Mini Pizzas Great Light Food

Ahh, I bet I surprised you today with a little food love.  I love food I am a foodie.  I can admit that.  And the look of these vegetarian mini pizzas look so tasty.  And the food photography makes you want to touch the screen and pick up one.  Go ahead we can’t see ya touch the screen…no better yet let’s close our eyes and envision the smell and taste.

Seriously, I am not sure that I would make my own pizza dough or bread of any kind is just not on my list.  I do know the local food stores have ready-made pizza dough.  I love the idea of a wide range of vegetables you can make all at once on the weekend and then just pull them out the day you want to plan out this meal.  I know I am always looking for quick, simple and easy stuff to make.  Hope this helps for a little lite food inspiration in the kitchen.  Thanks Green Kitchen Stories for such a tasty looking recipe.  The whole recipe is located on their lovely blog with all the details on how to cook up these little guys.  Happy cooking!


Vegetarian Mini Pizza
Makes around 8 – 10 small pizzas (5-inch) or 1 large

As we mentioned above you can use almost anything as topping, we have only written some suggestions. We marinate the zucchini and eggplant and make a proper tomato sauce ourselves, if you want to make it easier for yourself you can buy these things pre-maid in the supermarket.

1 cup lukewarm water
2 tsp instant dry yeast
2 tsp sea salt
2 1/2 cup spelt flour (we used light)
2 tbsp olive oil

Tomato sauce:
1 tbsp olive oil
1 onion, chopped
1 clove garlic
2 tbsp capers (drained)
a pinch of dried chili
1 1/2 cup of canned tomatoes
1 tbsp fresh or 1 tsp dried oregano
salt & black pepper

4 pre boiled potatoes
250 g marinated artichoke hearts
100 g kalamata olives
1 zuchini (marinated)
1 eggplant (marinated)
4 brown mushrooms, cut in quarters
1/4 fennel, thin slices
300 g small tomatoes
2 small spring onions, divided in half
1/2 broccoli100 g goat cheese
salt & black pepper
fresh aragula, put it on after the pizza has been in the oven

My first pizza choice is usually meat lovers (not a common choice for girls!) but these vegetarian ones are really tempting me! I love homemade pizza I even make my own dough when I get be bothered! I’m getting very hungry looking at these images & thinking about pizza – better go & get some lunch

Hola! These look so yummy! I used to be a big Boboli pizza fan but lately I have not ventured into these DIY pizzas. I might just have to give it a go. The pictures are amazing, I wish I could get a bite right now :
